Grated Yam Bake with Mentaiko and Cheese

Grated Japanese yam bakes into a soft, savory dish with spicy cod roe and cheese.

Servings and Time

Serves 2-3 as a shared small plate. 15 minutes prep; 20-25 minutes cooking. Times are approximate; use the doneness checks below.

Ingredients

  • 250 g nagaimo or yamaimo (Japanese yam), peeled and grated
  • 1 large egg
  • 40 g mentaiko (spicy cod roe), removed from its membrane
  • 40 g shredded melting cheese
  • 1 teaspoon soy sauce
  • 1 teaspoon neutral oil for the dish
  • Nori strips and sliced green onion

Grater, mixing bowl, shallow ovenproof dish, oven, and food thermometer.

Steps

  1. Heat the oven to 200 C / 390 F. Lightly oil a shallow ovenproof dish.
  2. Mix grated yam, egg, mentaiko, and soy sauce.
  3. Pour into the dish in a layer no deeper than 2 cm and scatter cheese over the top.
  4. Bake for 20-25 minutes until lightly browned and the center is set and reaches 71 C / 160 F. Extend baking if needed.
  5. Rest for 2 minutes and finish with nori and green onion.

Serving Notes

Use Japanese yam rather than a generic yam. Gloves can help if peeling makes your skin itch.

Nutrition Note

Mentaiko and cheese add salt, so taste before adding extra seasoning.
