Ham and Cheese Cutlets

Layers of ready-to-eat ham and cheese become crisp, golden cutlets.
Servings and Time
Serves 2-3 as a shared small plate. 15 minutes prep; 10 minutes cooking. Times are approximate; use the doneness checks below.
Ingredients
- 8 slices ready-to-eat ham
- 2 slices melting cheese, cut to fit inside the ham
- 3 tablespoons flour
- 1 beaten egg
- 60 g panko
- Neutral oil for shallow frying
- Shredded cabbage, to serve
Tools Used
Deep fry pan, tongs, three breading plates, and wire rack.
Steps
- Make two stacks: ham, cheese, ham, ham, ham, keeping the cheese inside the edges.
- Coat the stacks in flour, beaten egg, and panko, pressing the coating around the edges.
- Heat 1 cm oil in a deep pan to 170 C / 340 F. Fry for about 2-3 minutes per side until golden and the cheese is melted.
- Drain on a rack, cut carefully, and serve with cabbage.
Serving Notes
Let stand for 1 minute before cutting; the cheese will be hot.
Nutrition Note
Ham and cheese are salty, so season the accompanying cabbage lightly.
