Miso Soup with Tofu and Greens

Ingredients
- 3 cups dashi or light vegetable stock
- 2 tablespoons miso paste
- 150 g tofu, cubed
- 1 cup spinach, komatsuna, or other leafy greens
- Green onion, sliced
- Optional: wakame seaweed
Tools Used
A small saucepan, ladle, and fine mesh strainer or miso muddler are helpful.
Steps
- Warm the dashi in a saucepan. Do not boil aggressively.
- Add tofu and greens, then simmer gently until warmed through.
- Turn the heat low. Dissolve miso into the broth using a ladle or strainer.
- Serve with green onion and optional wakame.
