Miso Soup with Tofu and Greens

Miso soup is not just a side dish. It can be the warm center of a meal, especially when made with tofu and greens.

Ingredients

  • 3 cups dashi or light vegetable stock
  • 2 tablespoons miso paste
  • 150 g tofu, cubed
  • 1 cup spinach, komatsuna, or other leafy greens
  • Green onion, sliced
  • Optional: wakame seaweed

Tools Used

A small saucepan, ladle, and fine mesh strainer or miso muddler are helpful.

Steps

  1. Warm the dashi in a saucepan. Do not boil aggressively.
  2. Add tofu and greens, then simmer gently until warmed through.
  3. Turn the heat low. Dissolve miso into the broth using a ladle or strainer.
  4. Serve with green onion and optional wakame.

Pair with rice, grilled fish, pickles, or onigiri for a simple Japanese-style meal.
